I’m a huge fan of crowd-pleaser recipes that are also healthy. This is why my Strawberry Avocado Crunch Salad has become a go-to for light lunches and side dishes: it’s yummy and satisfying, but so easy to integrate into my family’s fresh eating habits for 2021.
This salad is also super customizable based on what you have in your fridge. You can sub strawberries for blueberries, replace feta with goat or blue cheese, and add whatever lean protein you prefer. Just keep the poppyseed dressing in the mix; it’s hands down the best part of the meal!
Directions:
This salad is super simple, just toss the salad ingredients together in a bowl, then blend the poppyseed dressing ingredients on high until smooth. I sometimes add grilled chicken for some extra protein, and I usually like to keep dressing on the side so it doesn't make the salad ingredients soggy.
Ingredients:
Strawberry Avocado Salad:
- Earthbound Organic Spring Mixed Greens
- Avocados
- Strawberries
- Feta Cheese (or your favorite crumbled cheese)
- Candied Pecans or Walnuts
- Purple Onion (optional)
- Grilled Chicken
Poppy Seed Dressing:
- 1/2 Cup Olive Oil
- 1/2 Tsp. Salt
- 1/2 Tsp. Sugar
- Juice of one lemon
- 1 Tbsp. Vinegar
- 1 Tbsp. Honey
- 1 Tbsp. Poppyseeds
- 4 Tbsp. Non-fat Greek Yogurt
