Memorial Day Menu...

Pink Lemonade: Keep it easy! I just get a bottle from the store. My favorite is Simply Lemonade with Raspberry Juice.

Grilled Hamburgers with Colby Jack Cheese: My favorite dinner time main course in the summer is a hamburger cooked on our Trager Grill! Drew seasons it with salt, pepper, and this seasoning and then melts a slice of Colby Jack Cheese over it. Mouthwatering!

Guacamole: Our family loves homemade guac! My little sister Amy makes it best. She just adds avocados, salt, garlic salt, and lime juice in a bowl and mixes it all up. **We love to put the guac or avocado slices over our burgers with the Sweet & Heat BBQ Sauce–it’s beyond amazing!

Watermelon Dip: Watermelon is a summer staple–pair it with my Mother-in-Law's yummy and sweet dip! It will be gone by the end of the night. In a large mixing bowl, add 8 oz of cream cheese and 13oz of marshmallow cream (large jar).

Mexican Street Corn: This is my favorite side dish during the summer! It’s fresh and always a hit at family BBQs. You can leave the corn on the cob, but I actually prefer to get a large bowl and cut the corn off the cob after it’s boiled and mix the ingredients below together. A little easier to eat that way too!

Ingredients:

Corn on the cob

Mayo

Cilantro

Cotija Cheese (you can crumble it or grate it)

Mexican Chili Powder

Salt

Directions:

** Corn on the Cob:

Boil or grill the corn until done

Spread mayo on the corn with a baster

Sprinkle cilantro, sprinkle cheese and Mexican Chili Powder on top

** Corn in a bowl:

Boil or grill corn

Cut corn off of husk and add to a large bowl

Add cilantro, a few spoonfuls of mayo, salt, cheese and top off with chili powder. I just eye my amounts. You can add as little or as much as you would like! Enjoy!

S’mores Dish: I made this for a family BBQ last summer and it quickly became a favorite! It is perfect for a summer night because you get to the amazing taste of s’mores without the mess!

Ingredients:

Graham Crackers (3 Packs out of the box)

1 Stick of Butter

Hershey’s Milk Chocolate Bars

Marshmallows

Directions:

Crumble up the graham crackers until they are very fine. You can use a gallon ziplock bag and a rolling pin to roll over the top of the bag. This should break up the graham crackers nicely.

Melt the butter and mix the graham crackers and butter in a large mixing bowl.

Press the graham cracker crust into the bottom of a cast-iron skillet.

Add a layer of Hershey’s Milk Chocolate Bars on top of the crust layer.

Finally, stand up the marshmallows on top of the Hershey’s bars and squeeze in as many marshmallows as you can.

Place the dish in the grill to bake. Cook until the marshmallows are golden on top! :)

Hope you all have a wonderful and safe Memorial Day weekend!
