I was at the gym the other morning and I was talking to one of my friends who's home base is in Boston. She's summering in Park City so she's been coming to our workout classes. We were talking about food, if we cook at home most days and what types of healthy meals are our favorite. She's vegan so I had her give me the rundown on her favorite protein options for salads. She told me chick peas were among her favorite so after I picked Isla Rose up from preschool, I stopped by the grocery store. I picked up a bunch of fresh ingredients to make a salad, I kind of just guessed what would pair good together and it ended up being so fresh and so delicious! And it's super quick and easy to make.

Two handfuls of Mixed Greens - I use this brand from Harmon's
1 Avocado
Spoonful of Feta Cheese
1/3 Cup of Purple Onion
1/2 Cup of Chickpeas
Handful of Cilantro
Cherry Tomatoes
Salt and Pepper to taste
You can add your fave protein like chicken or steak to this salad as well!
